Corn Bread Recipe From Pamela

Prepared by Ron & Sue, August 2004 . Note from Sue: I added brown rice to my corn bread, made double the recipe, and used a larger pyrex dish and baked it for 45 min.

½ Lb Soft Tofu Pinch Baking Powder
¾ Cup Water Pinch Sea Salt
¾ Cup Maple Syrup Cooked Onion Or Corn, (Optional)
¾ Cup Canola Oil Cooked Grain, Your Choice,
1 Tsp Vinegar -Couscous, Brown Rice, Teff, Or
1 Cup Corn Meal -Millet (Optional)
1 Cup Whole Wheat Pastry Flour

Oil a 9" x 11" pyrex dish and preheat oven to 375°. Put wet ingredients into a blender and blend tofu, water, maple syrup, vinegar, and oil well. Place all dry ingredients into a bowl and mix well. Mix wet ingredients and dry ingredients together (add onion, corn or rice at this point) and mix well. Bake for 30-45 min. depending on whether you added the cooked grain.
