Preheat the oven to 400° F. To peel peaches, bring a pot of water to a boil. Add peaches, and when boiling resumes, turn off heat and transfer peaches to a cutting board. When barely cool enough to handle, peel off and discard skins. In a large bowl, mix filling ingredients. Transfer to a 2-quart baking dish. Place a piece of foil or a baking pan under dish to prevent spillage. Cover and bake until fruit is bubbling, about 40 min. In a medium-large bowl, mix dry ingredients for topping. Stir in soy milk and vanilla. Transfer heaping tablespoons of dough to top of fruit, spreading with back of spoon to cover surface. Sprinkle oatmeal and nutmeg on top.
