Peach Cobbler With Fat Free Topping

------ Filling ------ 1/2 Cup Unbleached White Flour
3 Lbs Peaches 6 Large Or 7 Cups, 1/4 Cup Brown Rice Syrup
-Peeled If Desired, Sliced 1 1/2 Tsp Aluminum-Free Baking
1/4 Cup Fruit Sweetened Marmalade -Powder
1 Tbs Lemon Juice 1/2 Tsp Sea Salt
1/4 Cup Brown Rice Syrup 1/2 Cup Eden Blend (Rice & Soy
3 Tbs Arrowroot Powder -Milk)
1/4 Tsp Sea Salt 1 Tsp Vanilla
------ Topping ------ 4 Tbs Oatmeal
3/4 Cup Whole Wheat Pastry Flour 1 Tsp Nutmeg

Preheat the oven to 400° F. To peel peaches, bring a pot of water to a boil. Add peaches, and when boiling resumes, turn off heat and transfer peaches to a cutting board. When barely cool enough to handle, peel off and discard skins. In a large bowl, mix filling ingredients. Transfer to a 2-quart baking dish. Place a piece of foil or a baking pan under dish to prevent spillage. Cover and bake until fruit is bubbling, about 40 min. In a medium-large bowl, mix dry ingredients for topping. Stir in soy milk and vanilla. Transfer heaping tablespoons of dough to top of fruit, spreading with back of spoon to cover surface. Sprinkle oatmeal and nutmeg on top. Return to oven and bake until golden, 15 min. more.
