Tofu Dill Dip (Or Salad Dressing)

1 Lb Tofu, Firm 1 Lemon, Juiced
¼ Cup Fresh Dill, Chopped Very Fine Shoyu, Few Drops (Optional)
½ Med. Yellow Onion, Grate Brown Rice Vinegar, To Taste
-Using Ginger Grater -(Optional)
1 ½ Tsp Ume Vinegar, To Taste

Cook tofu for 5 min. Put through a food mill or blender. Add dill and onion to tofu. Add vinegar and lemon. It can be thinned down with water for a pleasant consistency. For variety, add a few drops of shoyu or brown rice vinegar.
