Couscous With Carrot And Raisins

1 ¾ Cups Water 8 Oz Couscous
1 Clove Garlic, Minced ¼ Cup Raisins
½ Tsp Paprika 3 Tbl Almonds, Sliced
½ Tsp Coriander, Ground 2 Tsp Olive Oil
½ Tsp Salt 1 Cup Carrots, Shredded

Combine water, garlic, paprika, coriander, and salt in a saucepan. Bring to a boil over medium heat. Stir in couscous, carrots, and raisins. Cover, remove from heat, and let stand 5 min. or until couscous has absorbed liquid. Add almonds and oil, fluff with a fork, and serve.
