Polenta With Vegetables

1 Cup Corn Grits 1/2 To 1 Cup Carrots Or Green
3 Cups Water -Beans Or Both
˝ Cup Onion (Or Small Onion) ˝ Tsp Sea Salt
˝ To 1 Cup Frozen Or Fresh Corn

Sauté onions in pot until translucent and add only half the salt. Add water and veggies and bring to a boil. Add another 1/4 tsp. salt. Start slowing stirring corn grits into water and keep stirring. Add more water if needed. Stir for 5 min. and then cook on low following instructions on box of corn grits. It should look like applesauce. Let set at least 2 hours before eating. It is better the next day.
