Corn Salad

| 1 Cup Barley |
1 Rib Celery, Diced |
| 3 Cup Water |
½ Cup Cucumber, Scallion, Red |
| 1/8 Tsp Sea Salt |
-Onion, Or Parsley |
| 1 ½ Cup Kernals From 2 Medium Ears |
----- Dressing ----- |
| -Corn |
3 Tbl Each Brown Rice Vinegar, And |
| ½ Cup Carrots, Diced |
-Umeboshi Vinegar |
| ½ Cup Red Radish (Or Red Pepper) |
2 Tbl Sesame Oil |
| -Diced |
1 Tbl Fresh Dill, Or 1 Tsp Dry Dill |
| ½ Cup Broccoli Florets |

Cook barley in water with salt for 1 hour (no flame tamer). Cool. Steam corn and vegetables, approximately 6 min. Mix together with dressing.
