Barley Corn Salad

1 Cup Barley 1 Rib Celery, Diced
3 Cup Water ½ Cup Cucumber, Scallion, Red
1/8 Tsp Sea Salt -Onion, Or Parsley
1 ½ Cup Kernals From 2 Medium Ears ----- Dressing -----
-Corn 3 Tbl Each Brown Rice Vinegar, And
½ Cup Carrots, Diced -Umeboshi Vinegar
½ Cup Red Radish (Or Red Pepper) 2 Tbl Sesame Oil
-Diced 1 Tbl Fresh Dill, Or 1 Tsp Dry Dill
½ Cup Broccoli Florets

Cook barley in water with salt for 1 hour (no flame tamer). Cool. Steam corn and vegetables, approximately 6 min. Mix together with dressing.
