Barley Salad

1 Cup Barley 1 Cup Peas
3 Cups Water 6 Shiitake Mushrooms, Dried
1 Carrot, Diced Ume Vinegar
1 Onion, Diced

Cook barley with 2 cups water for 45 min. Soak shiitake in 1 cup water & cook for 10 min. Dice veggies and blanche. Toss and season to taste with umeboshi vinegar.
