Pressed Salad 2

1 Part Red Cabbage, Grated And 1 Red Onion
-Sliced (At Least 1 Cup) 1 Green Apple, Grated
3 Parts Napa Cabbage 1 ½ Tsp Salt
1 Cucumber 2 Tbl Umeboshi Vinegar

Wash and slice desired vegetables into very thin pieces. Place vegetables in a bowl and sprinkle with salt. This much salt was for a large bowl of salad. Mix gently with your hands. Place a plate on top of the vegetables. Put a jug of water on top of the plate. (At least 1 gallon full.) Leave it for at least 2 hours. Pour off extra water. Slice red onion into half moons and place in a small bowl. Pour vinegar over onions. After several hours, drain the onions and taste. If too salty, rinse under cold water and press water out. Mix this mixture thoroughly with pressed mixture. Add the apple to the mixture..
