¾ Cabbage, Cut Thinly -Cut In Half Moons
1 Cucumber, Seeded, Cut In ½ ------ Dressing ------
-& Then, Cut In Half Moons 2 Tbl Umeboshi Vinegar
½ Red Onion, Cut Thinly 2 Tbl Balsamic Vinegar
1 Carrrot, Cut In ½, & Then 1 Tbl Sesame Oil

Combine all ingredients. Sprinkle with salt and let sit a few minutes to wilt. Dressing: Mix the dressing ingredients together and sprinkle over the vegetables. Mix well. Place a plate with a weight on top and press for an hour.
