Split Pea Soup

Prepared by Mike & Carole, March 2004 . "This is the official recipe. I usually let it simmer another half hour because it improves the taste. I also like the soup more stewey so I put in more of all the veggies and split peas. Sometimes I add leeks."

1-2 Stalks Celery, Finely Diced ¼ Cup Burdock, Shaved
1-2 Carrots, Finely Diced 1" Piece Kombu Sea Vegetable
1 Cup Split Peas, Dried 6 Cups Water
1 Onion, Finely Diced

Combine in a soup pot the celery, carrots, peas, onion, burdock, kombu, and water. Bring to a boil. Simmer for 50 min. Add a pinch of sea salt and simmer for 10 min. more.
