Chinese Sweet And Sour Balls

1 Tbs Almond, Butter 4 Green Onions, Sliced Thinly
1 Tbs Soy Sauce 1 Tbs Oil
1 Lb Tofu ----- Sweet Sour Sauce -----
½ Cup Whole Wheat Flour 1 Cup Apple Juice
½ Cup Green Pepper, Chopped In 6 Tbs Sweetener Of Choice
-¼" Pieces 6 Tbl Apple Cider Vinegar
¼ Cup Fresh Mushrooms, Sliced 2 Tbl Soy Sauce
¼ Cup Fresh Water Chestnuts Or 1 ½ Tbl Kuzu
-Celery ¼ Tsp Garlic Powder

Preheat oven to 350° F. Whip together almond butter and soy sauce. Mash tofu in a bowl. Mix whole wheat flour, almond/soy mixture, green peppers, mushrooms, chestnuts or celery, and green onions. Form into 16 one and one-half inch balls, and arrange in an 8"x8" pan spread with oil. Bake 20 min. Then carefully turn each one over and bake 20 min. more. Serve on rice wth Sweet & Sour Sauce. To make sauce, combine all sauce ingredients in a saucepan over medium heat. Whisk out all lumps, heat and stir constantly until thickened.
