Crispy Brown Rice Bars

Prepared by Pamela Buonanotte, October 2004, from Christina Pirello's Cookbook. "These no-bake treats are reminiscent of a childhood favorite made with refined grain and sweeteners. This version offers more nourishment as well as that unique crispy-crunch!"

¼ Cup Almond Or Peanut Butter ½ Cup Currants
1/3 Cup Brown Rice Syrup ½ Tsp Vanilla Extract
½ Cup Roasted Almonds Or Peanuts, ½ Tsp Ground Cinnamon
-Chopped (Optional) 4 Cups Crispy Brown Rice Cereal

Combine all but the cereal in a mixing bowl; stir to blend well. Add cereal and stir gently until well-mixed. With moistened hands, press evenly into a lightly-oiled 8"x12" rectangular baking pan or casserole dish. Chill for at least 1 hour. Cut into 24 pieces.
